NZ GST and overseas VAT are different.

Qualifying exports may be zero-rated for NZ GST, with evidence. An EU consumer sale can still require EU VAT. Configure the relevant Stripe Tax registrations; your business handles registration, filing and payment to tax authorities.

Where does the buyer's money go?

Can I sell outside New Zealand?

Yes, when you enable it. Eligible exports may be zero-rated for New Zealand GST, while obligations in the buyer's country can still apply. Get advice for your circumstances.
